Can I undo it?

No. delete_brand_kit is free, but the kit, its logo and its images are deleted for good and their links stop working.

What happens to what I made with it?

Nothing: deleting the kit doesn't touch the images, videos and voiceovers you made with it.

Can I remove just one image instead?

Yes. Ask your assistant to remove it from your brand kit, or remove it on the Brand kit page of your Library.
